Guar Gum Powder (100gr) - Organic Product
Guar gum is seed flour and is obtained by grinding guar gum.
This miraculous powder will free your hands in your pastry and cooking for its amazing ability to coagulate your recipes.
Its coagulation is at least 5 times stronger than cornflower.
The main cultivation areas are India and Pakistan. This natural product is not fertilized with artificial fertilizer.
Guar gum forms in low concentrations high viscosity solutions that are used due to the result that it coagulates easily. Guar gum has the ability to dissolve even cold.
Applications: Cold foods such as ice cream, desserts, sauces, soups, drinks, whipped cream, fruit salad, creams, mayonnaise, cakes, cheesecakes, drinks, etc. Also in hot soups and sauces.
This guar gum is organic, free of mutant ingredients, gluten-free, vegan and consists, like locust bean gum, mainly of indigestible fiber.
For light binding: 3 g (about 1% TL) guar gum in 250 ml for e.g. sauces or soups. 5 g (about 2% TL) of guar gum in 250 ml for e.g. Ice cream, mayonnaise, creams or desserts.
For bakery products: add 2-3 g (about 1 teaspoon) per 1 kg of flour.
Store in a dry place and protect from heat.
