Quinoa is a pseudo-cereal derived from a shrub native to Peru and Bolivia. Its fruit resembles cereals, while in taste and texture it resembles nuts.

Because it does not contain gluten, it can be consumed without fear by those who have celiac disease or gluten intolerance.

It has a low glycemic index, ie it does not raise blood sugar levels sharply, keeps you full for longer and is a good solution for diabetics.

Quinoa is a good source of carbohydrates, proteins (14% content), calcium, antioxidants (flavonoids), iron, phosphorus, magnesium, B vitamins, dietary fiber, anti-inflammatory substances and monounsaturated fats.

How to use:

  • It is cooked like rice. Use twice the amount of water from the quinoa. The ratio goes 1: 2, ie for each cup of quinoa, use two cups of water. One cup of raw quinoa gives three cups of cooked quinoa. It is good to rinse the quinoa before cooking. Put it in a colander under the tap and let the water run for a while.
  • Make breakfast (quinoa boiled with milk, honey and cinnamon)
  • Grind it and use its flour in cookies, cakes and pies etc
