Description
Black, white and green pepper is the fruit of the same plant at different stages of ripening.
The green pepper comes from the unripe, green, fruits of the plant, which are collected before they ripen, undergo a special color stabilization treatment and are dried.
The fruits have characteristic folds and a silver-green color.
Their wrist is soft and easily broken, to reveal a hard endocarp.
The aromas of green pepper are more discreet than black and move in more fruity and earthy tones.
The same goes for its taste, which is less than half as hot as black pepper.
Ideal for fish, vegetables, thin sauces and generally for dishes where other peppers would be in danger of masking their flavors.
Combines harmoniously with thyme, laurel, rosemary, sage, vinegar and lemon.
