Amaranth is the superfood of cereals because it contains more protein than most cereals and two basic amino acids, lysine and methionine.

Amaranth contains 62-65% starch and has a high glycemic index. In addition, it is rich in fiber and contains vitamins A and C as well as calcium, iron, magnesium, phosphorus.

What is great about Amaranth is its unusually high levels of lysine. This makes Amaranth protein extremely valuable and has been found to benefit metabolism as well as being linked to slowing aging. Athletes especially know lysine, because it makes a lot of carnitine. And this in turn can benefit the balance of energy and endurance.

Amaranth is also rich in safe fatty acids, the main of which are high quality linolenic acids which have been found to benefit the body in terms of optimal performance and well-being. In addition, Amaranth is known to contain the minerals magnesium and iron, along with calcium, at levels that can contribute to the body's daily needs for these minerals.

How to use:

  • For cooking. Boil 6 cups of water for each cup of amaranth as a rice substitute as a garnish or in combination with rice for an even sweeter result.

           It can be added to soups to make them thicker, creating a gelatinous form.

           You can make popcorn with its seeds.

           With its flour, you can make pastries, such as bread, cakes, pies, pancakes, breadsticks, cookies and pastries. Because it does not swell easily, usually in the preparation of bread, a mixture with other flour is used.

  • As breakfast as porridge, something similar to oats. Nuts, raw and dried fruits and honey can be added to this mixture.
  • In smoothies, to enhance their protein and fiber content.

To boil the amaranth, use water and amaranth in a ratio of 3: 1. Use the maximum temperature to boiling point, then lower the temperature and let it simmer for 20 minutes, until the water is absorbed.

Before using it, you can soak it in water and let its seeds germinate for one to three days. Soaking makes the seeds more digestible and breaks down the ingredients that prevent the absorption of metals.
